Christmas treats

Well, the holiday treats are starting to roll into the office, both commercial and homemade. It’s hard to resist the chocolate, cakes and other goodies.

For the past few years, I haven’t done much Christmas baking in December. Seems like there is so much food for the taking that I don’t make anything to keep at home. I’d just eat it.

Trouble is, come January, I remember my favorite Christmas recipes and then decide to make them, if I didn’t get them in December. Many’s a January I gained 10 pounds. Yikes!

Among my favorites are a Velveeta cheese fudge and about anything dipped in white chocolate. Hmm … maybe this year I will dip the fudge in the white chocolate. Never did that before.

What are some of your favorite Christmas goodies? Have you made any of them yet? Will you drop off some at my house?

    Hey Alica, what is Velveeta cheese fudge? I’ve never heard of it. Anyway, my favorite Christmas treat is chocolate star peanut butter cookies and grandma’s popcorn balls. Yum!

    Velveeta Cheese Fudge

    Melt together:
    1/2 lb. Velveeta cheese
    1/2 lb. butter or margarine
    Stir in:
    1 tsp. vanilla
    Pour over:
    2 lb. powdered sugar
    1/2 c. cocoa powder
    Stir together until smooth. Add nuts (I like pecans) if desired. Spread into an 8×8-inch or 9×9-inch pan. Serve chilled.

    Sounds weird. Tastes great. Easy to make, too.

    Snowballs. I have also heard them called Mexican Wedding Cookies and Russion Tea Cookies. I have a recipe for Peppermint Snowballs that I will try this year, and I am perfecting my candy cane cookies, to look & taste like my Great-Aunt’s. I try to make enough to give as gifts, so Alica, heads-up!!

    When I was a kid, my mother used to make a treat that had marshmallows and walnuts held together with chocolate. She’d roll the mixture into a log and then into coconut. She’d wrap the whole thing in foil and store it in the freezer, slicing it bit by bit during the holidays.

    Sometimes I would sneak a slice. It was great stuff. I don’t remember what she called it, though. I have the recipe, but I’ve rarely made it because my daughter won’t eat nuts and my son won’t eat coconut.

    I’ve seen the same thing made with colored marshmallows, but I like the flavor of the original white marshmallows better in this recipe. When it’s made with colored marshmallows, though, it looks sort of like stained glass windows, which is pretty cool.

    To #4 Anonymous: I know those cookies you are talking about. They are little balls tossed in powdered sugar, right? I love those.

    Oh, “Snowballs” are my favorite too. Like most treats, I happen to have on hand

    Alica, Melt 1 bar (4 oz) German chocolate with 4 Tb butter. Remove from heat. Add 1 beaten egg and 1 c powdered sugar. Stir and add colored marshmellows. Spread coconut on wax paper. form 2 logs on the coconut moving the coconut around to cover them. Wrap and keep in the freezer. Cut and serve.

    I made the velveeta fudge–very good, but you need to be strong to stir in all of that powdered sugar.

    This week I made the fudge, let it chill in the fridge and then I rolled it into little balls. I chilled them again, then I pushed a pretzel stick into each ball and dipped it in white chocolate. Rich and sweet, I know, but each one was just a little bite.

    They were good.
